Today I'm sharing a light salad ... tuna, and one of my favorites!
A bit of food history on this one ... it was a very simple recipe my mom used to make for us all year round, and I never tired of it. Her version was just a tad bit different, but not so much. I've changed it up over the years by adding the cucumbers, onion powder, and apple cider vinegar.
The ingredients in this salad are basically 'to taste', so have fun with it, and please let me know how you like it!
Tuna Salad ...
2 cans White Albacore Tuna in water, no salt - drained
Chopped pimento - half of a small jar and use about half of the juice as well
1 fresh tomato chopped
2 baby cucumbers chopped
onion powder
Lemon juice - amount depending on how much lemon flavor you like, but it is the main flavor
Bragg's apple cider vinegar - not as much as the lemon juice ... I use about a teaspoon
atlantic sea salt
black pepper
Open tuna cans, drain, put in bowl with lid - (this is just as good the second day).
Add 1/2 jar of chopped pimento with juice and stir.
Chop tomato and cucumbers.
Add to tuna mixture and stir.
Add onion powder, lemon juice, apple cider vinegar, salt, pepper and stir.
If needed, adjust these last ingredients to taste.
I eat mine with some delicious little crackers that compliment it nicely.
